Tapas & Tequilas

Happy cinco de Mayo everyone! I hope you're day is filled with chips and salsa, lots of guacamole, and overflowing margaritas! I am happy to share a fun little pairing perfect for the most festive of events and absolutely just right for cinco de Mayo! First we'll start with the best part, the tequilas:

The Blood Orange Pomelo

For this recipe you will need:

- 1/4 cup fresh grapefruit juice

- 1 tablespoon fresh lime juice

- 2 tablespoons of blood orange juice

- 1/2 oz of simple syrup

- 1/4 cup tequila (Our fave is Lunazul always)

- 1/4 cup club soda

- Salt rim

Simply mix simple syrup with grapefruit juice, lime juice, blood orange juice, and ice. Rim glass with salt.  Add Lunazul tequila and shake vigorously. Pour into a rocks glass then top with club soda. Very simple! My husband loves making these and I always love to watch.

It pairs great with prosciutto de parma and Spanish cheese. We like to use Manchego because the caramel and nutty flavors mesh so well with the tequila and is a great balance of sweet and salty. We are big cheese eaters though, there is hardly any cheese out there we won't try.

Just give me a sunset and this on a porch in the evening and I'm in heaven! I hope you all get to try this sometime. You will NOT be disappointed. I would love to hear what drinks you like to make up! Although tequila is definitely one of our liquors always on hand, it is especially front and center for cinco de Mayo in our household. Now it's time for me to go and get my fiesta on!!
