Teriyaki Burger & Summer Salad Recipes

Friday, June 9, 2017

My family absolutely loves getting together, sometimes planned, sometimes impromptu. Both are always a blast because we get to catch up on each other's lives and reminisce about days gone by. I thought I would share some recent favorite recipes that my family absolutely LOVES and are perfect for a nice, grilling out, outdoor dinner. It is a Teriyaki Burger with a Summer Salad meal, as well as I will give my insight on how to set up a perfectly cute dinner party in a hurry and on a budget. Sometimes we forget how easy it can be to use household items to dress up a table to make is special, which a lot of what I used came from things found around the house. But first things first, the mouthwatering burger!

 Teriyaki Burger Recipe

What you will need:

- Ground Beef (1lb)

- Teriyaki Sauce (3 tbsp)

- Soy Sauce (1 tsp)

- Garlic Powder (3/4) tbsp

- Bread Crumbs

- Hamburger Buns

- Pineapple Slices

- Olive Oil

- Eggs (1)

- Yellow Onioin (1)

- Monteray Jack Cheese

- BBQ Sauce of choice (sweeter is better)

** This amount is for about 4 good sized burgers. We basically just doubled everything for our family.

Prep & Cook:

Pour the teriyaki, soy, & garlic powder together in a small bowl and mix. Put the ground beef in a large mixing bowl, add the raw egg, and pour the teriyaki mixture overtop. It's time to get dirty as you use your hands to mix up these ingredients, adding breadcrumbs along the way to thicken the patties. Form hamburger patties and prepare them for the grill. While on the grill you may want to add a splash more teriyaki just for good measure. Take the olive oil and do a light spread on the inside of the hamburger buns and place them on the grill on low heat. This gives it a light, crisp crunch. Don't forget to add the cheese slices to the patties just before taking them off the grill.

Chop the yellow onion into diced pieces and saute them in a pan with olive oil while the burgers are cooking. Once everything is done, place the patty on the bottom burger bun, circular pineapple slice on top of that, sauted onions inside pineapple ring, BBQ sauce to taste and place the top burger bun last. It's literally melt in your mouth good!

How to Make It:

Soak 1/2 thinly sliced red onion in cold water. Pat dry 4 cups diced watermelon and 1 seeded and sliced cucumber. Toss together in a salad bowl with a handful of thinly chopped and diced cilantro. Drain the onion, squeeze dry and add to the salad. Cut, pit, and dice the avocado to add to the bowl as well. Add 1/4 cup olive oil and the juice of 1/2 lime. Seriously you guys this is my favorite, healthy summer go to that I will consistently be making and keeping in my fridge. It's SO delicious!! My husband is the master at creating new things and this one definitely is top of the charts for me!

When I heard we were having the family over for dinner, it was so beautiful outside I knew I wanted it to be a back yard event so I ran to my trusty, budget friendly store, Dollar Tree to find quick supplies for a nice, evening backyard dinner party. I wanted to stick with the classic blue and red aesthetic, and although I originally went in with an inspiration around using gingham designs, sadly there were none in sight so i rallied. Let me tell you, Dollar Tree is seriously stepping it up in dishes, designs, decor, etc., I was so surprised at what they had to offer! So I stayed with my red and blue theme, found these red plates (4pack for $1 and they're reusable WHAT?!?), blue scribble placemats, red table cloth to keep with the red blue red pattern, and a pop of design with a floral napkin that brings in both colors. I grabbed a $1 vase for flowers and used candles I already had around the house to set the ambience when the sun went down. And of course the blue and white swirly straws which went perfectly with the blue placemats! It was all coming together as I was setting the table until I saw my mom's garden full of wild daisies and used those as cute little accents around the table. We already have a small chandelier hanging from the outdoor gazebo so I added the wild daisies to this as well for extra excitement :). All in all, it took less than $10 to put together and 30 minutes to setup. Sometimes we forget to look at what we already have and draw inspiration from the nature around us, because it truly saved alot of money but looked like I bought it all from the store! Hopefully this inspires some of you to have your families over and create an outdoor dinner of your own!
